Ingredients

  • 4Bread slices
  • 1/4 cupCarrot, ribboned
  • 1/4 cupOnion, sliced
  • 1/4 cupCapsicum, sliced
  • 1/4 cupCabbage, shredded
  • 1/4 cupMayonnaise
  • 1 cupGrated cheese
  • to tasteSalt
  • to tastePepper
  • as neededTomato ketchup
  • 1 tspSchezwan sauce
  • as neededButter

Method

    In a bowl, combine the ribboned vegetables (carrot, onion, capsicum, cabbage) with mayonnaise, salt, pepper, ketchup and Schezwan sauce.

    Butter bread slices. Spread the veg-mayo mix generously on the buttered side of one slice.

    Cover with cheese. Top with another bread slice (buttered side down).

    Press in a hot sandwich grill (or pan-press with a heavy weight) for 4 minutes until golden on both sides and the cheese melts.

    Slice diagonally. Serve hot with extra ketchup or chutney.
