A quick no-yeast pizza base — yogurt + eno + baking powder for the lift. Ready in under an hour, soft yet sturdy enough for toppings.

- 140 g (1 heaped cup)Maida
- 100 mlYoghurt
- 1/4 tspBaking soda
- 3/4 tspBaking powder
- 1/2 tspEno
- 1/2 tspSugar
- 1.5 tbspOil
- 1/2 tspSalt

Sieve maida. Mix in baking powder, baking soda, salt and sugar.

Add yoghurt and knead 4–5 minutes — the dough should be soft and pliable.

Add oil and knead again.

Sprinkle eno with a teaspoon of water, knead in for 1 more minute.

Roll into a 9-inch disc. Prick all over with a fork (prevents big bubbles).

Bake the base at 180°C for 8–10 minutes till just set and not browned. Top with sauce and toppings, then bake again for 10–12 minutes until cheese melts and edges brown.
