
Mumbai Masala Triple-Layer Sandwich
A Mumbai-style three-tier sandwich — Schezwan mayo + corn-carrot crunch on bottom, paneer-and-tandoori-mayo on top. Three layers of bread, two layers of flavour.

- 1/4 cupSchezwan sauce
- 1 tbspRed chilli flakes
- 1 tspSandwich masala
- 3 tbspMayonnaise
- 1/4 cupSweet corn
- 2 tbspCapsicum, chopped
- 1 cupCarrot, grated
- 1/2 cupProcessed cheese, grated
- 200 gPaneer, grated
- 1/4 cupTandoori mayonnaise
- 1/2 tspSandwich masala (top layer)
- as neededGreen chutney
- 1Green chilli, chopped
- to tasteSalt
Method

Layer 1 — corn-veg mix: combine Schezwan sauce, chilli flakes, sandwich masala, mayonnaise, corn, capsicum, carrot, salt and processed cheese in a bowl.

Layer 2 — paneer mix: combine grated paneer, tandoori mayonnaise and 1/2 tsp sandwich masala.

Assemble: butter 3 bread slices. Spread mayonnaise + green chutney + green chilli on the buttered side of each.

On bottom slice: spread the corn-veg mix. Top with a second slice (buttered side down).

On the second slice: spread the paneer mix. Top with a third slice.

Press, slice diagonally into 4 triangles. Optionally grill on a sandwich press for a 90-second crisp finish.
