Veggie Delite Submarine Sandwich

The Indian submarine-sandwich counter favourite — soft sub roll layered with crisp lettuce, capsicum, onion, cucumber, tomato and olives, finished with mayo-mustard dressing. No-cook, customisable.

Ingredients

  • 4Sub rolls or 6-inch baguettes
  • 1 cupLettuce, shredded
  • 1 mediumCucumber, sliced
  • 1 largeTomato, sliced
  • 1 mediumCapsicum, sliced
  • 1 smallOnion, sliced
  • 2 tbspOlives, sliced
  • 2 tbspJalapeños (optional)
  • 4Cheese slices
  • 4 tbspMayonnaise
  • 1 tspEnglish mustard
  • 2 tbspTomato ketchup
  • 1/2 tspBlack pepper
  • 1/2 tspSalt
  • 1 tspMixed herbs
  • 1 tbspButter (for toasting)

Method

    Whisk mayo, mustard, ketchup, salt, pepper and mixed herbs into a smooth dressing.

    Slit each sub roll along the side without cutting fully through. Toast cut-side down in butter on a tawa for 30 seconds until lightly golden.

    Open the toasted roll. Place a cheese slice along the inside.

    Layer in this order: shredded lettuce, tomato slices, cucumber slices, capsicum, onion, olives and jalapeños.

    Drizzle the dressing generously over the veggies.

    Close the sub gently, press lightly, slice in half diagonally and serve immediately.
