Bread Kulfi

A shortcut malai kulfi — soaked bread thickens the milkmaid-and-cream mix without hours of reducing. Sets in moulds in 4 hours.

Ingredients

  • 1 cupMilk
  • 1 cupFresh cream
  • 2Bread slices, crusts removed
  • 1 cupMilkmaid
  • 1/2 tspCardamom powder
  • 1/2 tspKulfi essence
  • a few dropsCaramel colour
  • 3 tbspMixed dry fruits, chopped

Method

    Soak the bread in lukewarm milk for 5 minutes — it should soften completely.

    Transfer the soaked bread + remaining milk to a blender. Add condensed milk, cream, cardamom powder, kulfi essence and a couple drops of caramel colour.

    Blend smooth — about 2 minutes.

    Fold in chopped dry fruits.

    Pour into kulfi moulds (or paper cups with sticks). Freeze 6–8 hours.

    Run the moulds under warm water briefly to unmould. Serve sliced or whole on sticks.
