Masala Herbs Twisties

Savoury twist sticks — puff pastry rolled with oregano and mixed herbs, sliced thin, twisted and baked until crackly. The savoury cousin of the cheese straw.

Ingredients

  • 300 gHome puff pastry
  • 1 tspOregano or mixed herbs of choice
  • 1/2 tspChilli flakes (optional)
  • a pinchSalt
  • 1 tbspMilk, to brush

Method

    Roll the chilled puff pastry into a rectangle 4 mm thick.

    Brush the surface lightly with milk. Sprinkle the oregano, chilli flakes if using, and a pinch of salt evenly over the entire surface.

    Fold the rectangle in half so the herbs are sandwiched inside. Roll gently to flatten and seal.

    Cut into 1 cm wide strips. Hold each strip at both ends and twist into a spiral. Place on a parchment-lined tray.

    Brush the tops with milk. Bake in a preheated 220°C convection oven for 10 to 12 minutes until deep golden and crisp. Cool on a rack and store airtight.
