Summer Fruits in Honey Ginger Dressing

Ingredients

  • 4 cupsMixed seasonal fruits (apple, mango, banana, cherry, strawberry, kiwi, grapes), chopped
  • 4 tspFresh ginger, grated
  • 2 tbsp (2 dsp)Mint leaves, finely chopped
  • 4 tspHoney (golden syrup)
  • 1/4 tspBlack pepper powder
  • 5 tspLemon juice
  • a little more than 1/2 tspSalt
  • 4 tspFresh cream
  • 4 tspMayonnaise

Method

    Combine the chopped fruits in a large mixing bowl and chill for 10 minutes.

    For the dressing whisk together grated ginger, chopped mint, honey, black pepper, lemon juice and salt — taste and balance the sweet-sour.

    Just before serving, stir the cream and mayonnaise into the dressing until creamy.

    Pour over the fruit, toss gently with a spoon (do not crush the soft fruits) and serve immediately in chilled bowls.
