Ingredients
- 1 cupBesan (gram flour)
- 3/4 cupWater
- 1 mediumOnion, finely chopped
- 1 mediumTomato, finely chopped
- 2Green chillies, chopped
- 1 tspGinger, grated
- 2 tbspCoriander leaves, chopped
- 1/2 tspAjwain (carom seeds)
- 1/4 tspTurmeric powder
- 1/2 tspRed chilli powder
- 1 tspSalt
- 3 tbspOil (for cooking)

In a bowl whisk besan with water until smooth and lump-free — consistency of a dosa batter.

Stir in the chopped onion, tomato, green chillies, ginger, coriander, ajwain, turmeric, red chilli powder and salt. Rest 5 minutes.

Heat a tawa on medium. Brush lightly with oil. Pour a ladle of batter and spread gently to a 6-inch round.

Drizzle a few drops of oil around the edges. Cook 60 seconds until the bottom is golden and the top is mostly set.

Flip and cook another 30-45 seconds. Slide onto a plate and serve hot with green chutney or curd.
