Onion Uttapam

A thick, savoury pancake from dosa batter studded with onion, chilli and tomato — softer than a dosa, browner at the edges, served with chutney.

Ingredients

  • 2 cupsDosa batter (fermented)
  • 1 mediumOnion, finely chopped
  • 1 mediumTomato, finely chopped
  • 2Green chillies, finely chopped
  • 2 tbspCapsicum, finely chopped (optional)
  • 2 tbspCoriander leaves, chopped
  • to tasteSalt
  • 3 tbspOil or ghee (for cooking)

Method

    Mix the chopped onion, tomato, green chillies, capsicum and coriander in a bowl. Add a small pinch of salt and toss.

    Heat a tawa on medium. Pour a ladle of dosa batter and gently spread to a thick 5-inch round (do not spread thin like a dosa).

    Quickly scatter a generous spoon of the onion-veg mix over the top, pressing lightly with the back of a spoon so it adheres.

    Drizzle oil or ghee around the edges. Cover and cook 2 minutes on medium-low until the bottom is golden brown and the top is set.

    Flip and cook another 30 seconds — just to lightly char the veggies. Slide off and serve hot with sambar and chutney.
