A buttery oat-and-walnut cookie with raisins and a dusting of cinnamon. Hearty without being heavy.

Ingredients

  • 50 gButter
  • 50 gBrown sugar
  • 35 gHoney
  • 1/2 tspVanilla essence
  • a pinchSalt
  • 1/4 tspBaker's ammonia
  • 62 gMaida
  • 50 gOats
  • 25 gWalnuts, chopped
  • 1/8 tspCinnamon powder
  • 25 gRaisins
  • 1/2 tspBaking powder
  • 40 gDark chocolate, chopped

Method

    Beat butter and brown sugar until creamy.

    Add ammonia (dissolved in 1/4 tsp water), vanilla, honey and salt.

    Sieve maida, baking powder and cinnamon. Fold in along with oats.

    Stir in walnuts, raisins and chopped dark chocolate.

    Mix into a dough. Roll to 8 mm. Cut with a cutter.

    Bake at 180°C for 12–15 minutes until the edges are golden. Cool fully before lifting.
