- 100 gButter
- 100 gIcing sugar
- 50 gBrown sugar
- 50 mlMilk
- a pinchSalt
- 1/4 tspBaker's ammonia
- 1/2 tspVanilla essence
- 140 gMaida
- a pinchBaking soda
- 1 tspCocoa powder
- 100 gDark chocolate, chopped

Beat softened butter with icing sugar and brown sugar until pale and fluffy (3–4 minutes).

Dissolve baker's ammonia in 1/4 tsp water. Add to butter mix with salt and vanilla essence.

Sieve maida, baking soda and cocoa together. Fold into the butter mixture along with the milk.

Mix into a soft dough. Fold in 3/4 of the chopped chocolate.

Drop tablespoon-sized portions on a lined tray, 2 inches apart. Press a few reserved chocolate chunks on top.

Bake at 170°C for 15–17 minutes until the edges set and the centres still look slightly underdone — they'll firm up as they cool.
