Ingredients
- 6Fried vanilla doughnut base (see recipe), shaped as long oval
- 3/4 cupButtercream (see recipe)
- 1.5 tbspInstant coffee powder
- 150 gDark chocolate (melted, for coating)
- 3 tbspWhite chocolate ganache (see recipe)
- 1 tspExtra coffee powder (for ganache)
Method

Shape the vanilla dough into long ovals and fry.

Dissolve 1.5 tbsp coffee in 1 tsp warm water. Beat into buttercream.

Pipe coffee buttercream into each slit éclair.

Dip tops in melted dark chocolate.

Add 1 tsp coffee powder to the white-chocolate ganache. Drizzle over the dark-chocolate tops in zigzags.
