Mocha Éclair

A coffee-infused éclair — vanilla base, coffee buttercream, dark-chocolate coating, mocha drizzle. For grown-up sweet teeth.

Ingredients

  • 6Fried vanilla doughnut base (see recipe), shaped as long oval
  • 3/4 cupButtercream (see recipe)
  • 1.5 tbspInstant coffee powder
  • 150 gDark chocolate (melted, for coating)
  • 3 tbspWhite chocolate ganache (see recipe)
  • 1 tspExtra coffee powder (for ganache)

Method

    Shape the vanilla dough into long ovals and fry.

    Dissolve 1.5 tbsp coffee in 1 tsp warm water. Beat into buttercream.

    Pipe coffee buttercream into each slit éclair.

  4. 4

    Dip tops in melted dark chocolate.

  5. 5

    Add 1 tsp coffee powder to the white-chocolate ganache. Drizzle over the dark-chocolate tops in zigzags.
