
Valentine Strawberry Cake
A romantic pink-and-cream layered cake — vanilla sponge soaked with vanilla syrup, layered with strawberry crush and whipped cream, finished with strawberry filling and a heart-shaped piped border.

- 1 8-inch cakeVanilla sponge cake (basic vanilla cake)
- 1/2 cupVanilla soaking syrup
- 1/2 cupStrawberry crush
- 1/4 cupRaspberry or strawberry filling (optional)
- 3 cupsWhipped cream
- a few dropsPink food colour
- 6-8Fresh strawberries (for garnish)

Trim the dome off the vanilla cake and slice horizontally into 3 discs.

Place the first disc on a turn-table. Brush generously with vanilla soaking syrup.

Spread a thin layer of strawberry crush over the soaked sponge. Spread whipped cream on top, then spoon a little raspberry/strawberry filling in a thin ribbon.

Place the second disc, soak with syrup, layer with strawberry crush, whipped cream and filling.

Top with the third disc and lightly soak. Tint a portion of the whipped cream pale pink with food colour.

Mask the entire cake first with white whipped cream for a smooth base coat. Pipe pink whipped cream rosettes or a heart-shaped border on top using a star nozzle.

Decorate with fresh strawberry halves and refrigerate at least 2 hours before serving.
