- 2 cupsCarrot, grated
- 1/4 cupCapsicum, finely chopped
- 1/4 cupFresh cream
- 1/4 cupMayonnaise

- 2 tspTomato ketchup

In a bowl, combine shredded cabbage, grated carrot and chopped capsicum. Salt lightly and rest 10 minutes — they'll release some water; squeeze gently to drain.

Whisk cream, mayonnaise, salt, pepper and ketchup.

Fold the dressing into the vegetable mix.

Butter the bread slices. Pile coleslaw generously on one slice; top with another.
