Ingredients

  • 2 cupsCabbage, finely shredded
  • 2 cupsCarrot, grated
  • 1/4 cupCapsicum, finely chopped
  • 1/4 cupFresh cream
  • 1/4 cupMayonnaise
  • to tasteSalt
  • to tasteBlack pepper
  • 2 tspTomato ketchup
  • as neededButter
  • 6Bread slices

Method

    In a bowl, combine shredded cabbage, grated carrot and chopped capsicum. Salt lightly and rest 10 minutes — they'll release some water; squeeze gently to drain.

    Whisk cream, mayonnaise, salt, pepper and ketchup.

    Fold the dressing into the vegetable mix.

    Butter the bread slices. Pile coleslaw generously on one slice; top with another.

    Slice on the diagonal. Serve cold.
