- 1Basic vanilla sponge (see recipe), 8-inch
- 1/2 cupSoaking syrup with orange crush
- 3/4 cupMix fruit crush
- 2 cupsWhipped cream
- 3 dropsOrange essence
- 3 dropsPineapple essence
- 3 dropsStrawberry essence
- 1/4 cupPineapple chunks
- 1/4 cupApple, chopped
- 1/4 cupStrawberries
- 1/4 cupBlueberries
- a few dropsMixed fruit colour (optional)
Method

Divide the whipped cream into thirds; flavour each with one essence (orange, pineapple, strawberry).

Slice the vanilla sponge into 3 layers.

Soak the bottom layer with the orange-crush syrup. Spread orange cream. Top with a layer of mixed chopped fruit.

Place the middle layer. Soak. Spread pineapple cream and a layer of fruit.

Place the top layer. Crumb-coat with strawberry cream. Chill.

Final coat with strawberry cream. Decorate the top with whole fresh strawberries, blueberries, pineapple wedges and apple pieces.
