The legendary Madras coffee — strong filter decoction frothed with hot, sweet milk and poured between two glasses (the “meter” pour) until topped with foam.

Ingredients
- 1/2 cupCoffee filter decoction (drip-brewed)
- 1 1/2 cupsHot milk
- 3 tspSugar
Method

Set up a South Indian coffee filter the night before: add 3 tbsp ground filter coffee to the upper chamber, press, pour 1/2 cup boiling water, cover and leave overnight. The decoction collects in the lower chamber.

Heat milk in a small pan until just below a boil. Stir in sugar to dissolve.

Pour 2-3 tbsp of decoction into each davarah (small steel tumbler).

Top with the hot frothy milk.

To froth: pour the coffee from one steel tumbler to another from height, several times, until thick foam builds on top.

Serve immediately in the traditional steel tumbler + davarah.
