Ingredients
- 1 batchPizza dough
- 1/2 cupPizza sauce
- 1/4 cupMexican salsa (or pico de gallo)
- 1 1/2 cupsMozzarella cheese, grated
- 1/2 cupSweet corn, boiled
- 1/4 cupRajma (kidney beans), boiled
- 1 smallOnion, sliced
- 1 cupCapsicum (red, yellow, green), sliced
- 3 tbspJalapeños, sliced
- 2 tbspOlives, sliced
- 1 tspMexican spice mix or chilli powder
- 1 tspOregano
- 1 tspChilli flakes
- 1 tbspOlive oil (drizzle)

Preheat oven to 230°C.

Roll dough into a 9-inch round on parchment.

Mix pizza sauce with salsa and Mexican spice mix. Spread on the base, leaving a 1 cm border.

Scatter half the mozzarella, then onion, capsicum, corn, rajma, jalapeños and olives evenly.

Top with remaining mozzarella. Sprinkle oregano and chilli flakes.

Bake 9-11 minutes until cheese is melted with golden brown spots and crust is crisp.

Drizzle olive oil, slice and serve hot.
