
Chocolate Cherry Cake
A glace-cherry chocolate loaf — cocoa-rich condensed milk batter folded with chopped cherries and chocolate chips. Soft, dotted with ruby and dark studs.

- 150 gMaida
- 1 1/4 tspBaking powder
- 1/2 tspBaking soda
- 25 gCocoa powder
- 65 gGlace cherries, chopped
- 25 gChocolate chips
- 95 mlOil
- 200 gCondensed milk (milkmaid)
- 90 mlMilk
- 55 gSugar
- 1 tspVanilla essence
- 1/2 tspSalt

In a bowl whisk together oil and sugar until the sugar partially dissolves.

Add the condensed milk, vanilla and milk and whisk until smooth and uniform.

Sieve together maida, baking powder, baking soda, cocoa powder and salt.

Fold the dry mix into the wet in 3 additions just until no streaks remain — do not over-mix or the crumb tightens.

Toss the chopped cherries and chocolate chips in 1 tsp extra maida (to stop them sinking), then fold into the batter.

Pour into a greased and lined loaf tin. Bake in a preheated 170°C oven for 35 to 40 minutes until a skewer comes out with a few moist crumbs. Cool fully before slicing.
