Mumbai Bhurji Pav

Spicy egg or paneer scramble served with buttered pav buns — Mumbai street breakfast that wakes you up. Onion, tomato, ginger-garlic, green chilli all sizzling together.

Ingredients

  • 4Eggs (or 200 g crumbled paneer for veg)
  • 4Pav buns, halved
  • 3 tbspButter (for pav)
  • 1 largeOnion, finely chopped
  • 1 largeTomato, finely chopped
  • 2Green chillies, finely chopped
  • 1 tbspGinger garlic paste
  • 1/2 tspTurmeric powder
  • 1 tspRed chilli powder
  • 1 tspPav bhaji masala
  • 2 tbspCoriander leaves, chopped
  • 1 tspSalt
  • 2 tbspOil
  • 2Lemon wedges (to serve)

Method

    Heat oil in a pan on medium. Add chopped onion and green chillies, sauté until soft, 2 minutes.

    Add ginger garlic paste, stir 30 seconds, then add chopped tomato. Cook until tomato is mushy, 3 minutes.

    Add turmeric, red chilli powder, pav bhaji masala and salt. Stir for 30 seconds.

    Beat the eggs in a bowl (or crumble the paneer). Pour into the pan.

    Stir continuously on medium-low, breaking up the eggs as they set, until cooked through but still moist, 2 minutes.

    In a separate pan toast the pav halves in butter, cut-side down, until golden.

    Garnish bhurji with coriander leaves. Serve hot with buttered pav and lemon wedges.
