Tutti Frutti Vanilla Cupcakes (Bakery)

Cheery vanilla cupcakes studded with tutti-frutti — a school-tuck-shop classic. Bake plain or top with frosting.

Ingredients

  • 1 batchBasic vanilla sponge batter (see recipe)
  • 1/2 cupTutti frutti (chopped candied fruit)
  • 1 tspMaida (to dust the tutti frutti)

Method

    Toss the tutti frutti in 1 tsp maida — keeps it from sinking.

    Make the vanilla sponge batter. Fold the dusted tutti frutti through.

  3. 3

    Line a cupcake tray with 12 liners. Fill each 2/3.

  4. 4

    Bake at 180°C convection for 18 minutes. Cool fully.

    Eat plain, or top with vanilla buttercream (see recipe).
