Indian-restaurant-style Russian salad — chopped cabbage, capsicum, carrot and pineapple in a thick mayonnaise-cream dressing with a hint of English mustard. Mild, creamy and cold.

Ingredients

  • 1 cupCabbage, finely chopped
  • 1 cupRed, yellow or green capsicum, finely chopped
  • 1/2 cupPineapple, finely chopped
  • 1/2 cupCarrot, finely chopped
  • 1/2 cupMayonnaise
  • 1 cupFresh cream
  • 1/2 tspBlack pepper powder
  • to tasteSalt
  • 1/4 tspEnglish mustard

Method

    In a large bowl combine the cabbage, capsicum, pineapple and carrot.

    In a separate bowl whisk together mayonnaise, fresh cream, English mustard, salt and pepper until smooth and slightly thick.

    Pour the dressing over the chopped vegetables and fold gently until everything is coated.

    Chill for at least 30 minutes before serving so the flavours come together.
