A chaat-style warm potato salad — boiled potato cubes tossed with paneer, onion and tomato in a punchy mint-coriander-green-chilli dressing sharpened with chaat masala, ajwain and lemon.

Ingredients

  • 4 cupsBoiled potatoes, cubed
  • 1/4 cupPaneer, cubed
  • 1/2 cupOnion, chopped
  • 1/2 cupTomato, deseeded and chopped
  • 2 tbspCoriander leaves
  • 3/4 tspSalt
  • 1/4 tspBlack pepper
  • 1/4 tspAjwain (carom seeds)
  • 1/2 tbspBlack salt
  • 1/2 tspChaat masala
  • 1 tspLemon juice
  • a pinchGreen food colour (optional)
  • 1 to 2 tspRed chilli or schezwan sauce
  • 1/2 tspGinger paste
  • 1/2 tspGarlic paste
  • 1/2 cupMint leaves (dressing)
  • 1 cupCoriander stems & leaves (dressing)
  • 2Green chillies
  • 1 largeTomato (dressing)
  • 2 tbspOnion (dressing)
  • 2 tbsp (2 dsp)Salad oil
  • 2 tbspCabbage, shredded (garnish)

Method

    For the dressing blend mint leaves, coriander, dressing onion, green chillies and tomato to a smooth paste with 1-2 tbsp water.

    Whisk in black salt, salad oil, regular salt, ajwain, chaat masala and lemon juice. Taste — it should be sharp, green and bright.

    In a bowl combine boiled potato, paneer cubes, chopped onion, tomato, coriander leaves, ginger and garlic paste, chilli or schezwan sauce and a pinch of green colour if using.

    Add the dressing and toss gently so the potatoes stay in cubes.

    Plate up, garnish with shredded cabbage and an extra dust of chaat masala, and serve.
