
Tutti Frutti Vanilla Cupcakes (Continental)
Soft vanilla cupcakes flecked with tutti-frutti (or any fruit crush of choice) — quick to bake, child-friendly, the classic “fancy” cupcake of school lunchboxes.

- 1 1/2 cupsMaida
- 1 tspBaking powder
- 1/2 tspBaking soda
- 1/2 cupOil
- 1/2 cupCaster sugar
- 1/2 cupCondensed milk
- 1 cupSoda water (fresh, fizzy)
- 2-3 dropsVanilla essence
- 1/2 cupTutti-frutti
- 1/2 cupWhipped cream (for topping, optional)

Sieve maida, baking powder and baking soda together twice.

In a separate bowl whisk oil, sugar, condensed milk and fresh soda water until uniform.

Fold the dry into the wet in 2 additions, then add vanilla and whisk briefly.

Toss the tutti-frutti in 1 tsp extra maida (to stop it sinking) and fold gently into the batter.

Line 12 cupcake moulds with paper liners and fill each 2/3 with batter.

Bake in a preheated convection oven at 180°C for 18 minutes — a skewer should come out clean. Cool fully.

Optional: pipe whipped cream on top and scatter extra tutti-frutti. Note: you can swap tutti-frutti for any fruit crush, chocolate chips or chopped nuts to variate the flavour.
